Double Chocolate Zucchini Bread

The kids say this tastes like a brownie it’s sooo yummy 🙂

Double Chocolate Zucchini Bread

What you Need

  • 2 stick unsalted butter melted 
  • 2 cup brown sugar, packed
  • 4 large eggs
  • 2 teaspoon vanilla extract
  • 2-1/2 cups all-purpose flour,
  • 1 cup  cocoa powder 
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 cups shredded zucchini 
  • 2 cup  chocolate chips

Instructions

  1. Preheat the oven to 350 F degrees and grease 2 loaf pan with nonstick cooking spray.
  2. Mix together melted butter and brown sugar until completely smooth. (I used my KitchenAid mixer) Add the eggs and vanilla and mix well.
  3. Whisk together the flour, cocoa powder, salt, baking powder, baking soda in a medium bowl. Add to the butter mixture and mix until well combined.
  4. Stir in the shredded zucchini and chocolate chips.
  5. Spoon the batter into the 2 prepared loaf pans and spread evenly. Bake for 60-65 minutes, or until a toothpick or cake tester inserted into the center comes out clean. Let the loaf cool on a rack for about 10 minutes before turning out onto a rack to cool completely.

Zucchini Garlic Cheesy Bread

I made this last night to go with our spaghetti it was very yummy, this would be nice to have as a snack with some marinara sauce mmmmm. Great for people who are following a keto diet  My hubby and kids loved it  

Zucchini Garlic Cheesy Bread

What you need
5 cups grated zucchini
3 eggs
4 cloves of garlic minced
1 tsp oregano
3 cups shredded mozzarella
1 cup grated parmesan cheese
1/4 cup cornstarch
salt & pepper to taste
2 tsp parsley

Preheat oven to 425, line a baking sheet with parchment paper. make sure all moisture is out of your grated zucchini by patting it dry with a paper towel.
In a large bowl mix zucchini, eggs, garlic, oregano, 1 cup mozzarella, parmesan cheese, parsley, salt and pepper, and cornstarch. Stir until well mixed together.
Pour mixture on the prepared baking sheet and pat into a crust. Bake until golden brown and dried out about 30 mins.
Sprinkle remaining mozzarella cheese and sprinkle some more parsley on top and bake for 10 minutes more or until the cheese is melted
Slice and serve and Enjoy

Hot Apple Dumplings – DIABETIC Friendly

HOT APPLE DUMPLINGS ~ DIABETIC FRIENDLY

 

Ingredients:
6 apples of choice
12 teaspoons butter or margarine (light)
1/2 cup diabetic splenda
6 ounces diet 7 up
2 tsp ground cinnamon
9×13 inch baking dish

Directions:
Peel core and halve apples
place 1 tsp of butter or margarine in the hollow area of apple
Place apple right side up in dish and set aside

Pour 7 up over apples as evenly as possible

In bowl combine splenda and cinnamon and mix very well.
Sprinkle cinnamon mixture evenly over apples

Cover apples with your choice:
Pillsbury Biscuits (regular size)
Bisquick Biscuits Mix rolled out like pastry
Your own pastry cover

Bake in oven for 30 – 45 minutes ( do not overbake)

Let sit 5 minutes before serving

Spoon sauce over dumpling
Serve topped with ice cream or your favorite. Or by itself

Lisa’s Chicken Salad

Lisa’s Chicken Salad

1 cooked chicken breast cut up fine 
1 celery stalk chopped
1 small apple chopped ( I leave the skin on)
15 whole pecans chopped ( i only have whole ones so had to count them LOL)
2 heaping tablespoons of Hellman’s Mayo (that’s all I use )
Salt and pepper to taste
In a big bowl (if you’re anything like me you need a big bowl so you don’t make a mess LOL) Cut up your chicken ( I cut it and then use my fingers to make it smaller) add your celery, apples and pecans, add your mayo salt and pepper and mix well.
I have added dried cranberries before grapes if I have them.

Cherry Cordial Fat Bombs

Perfect for low carb diets like Atkins.

Ingredients:
4 oz Philadelphia Cream Cheese Regular (softened)
5 Tbsp butter (divided) (softened)
1/4 c + 1 Tbsp coconut oil
1 c frozen dark cherries
juice from 1/2 lemon
3 packets Stevia in the Raw
1 oz unsweetened baking chocolate squares

Directions:
Using a hand mixer, combine cream cheese, 4 Tbsp butter, 1/4 c coconut oil, lemon juice and 1 pk of Stevia, add more to taste if needed.
Line mini cupcake pan with cupcake holders. Add 1 Tbsp of the mixture to each cup. Place in freezer 3-4 hours until set.
Chocolate Topping:
Melt chocolate, 1 Tbsp coconut oil and 1 packet of Stevia or more if needed.
Put a drop of chocolate in each cup and spread it into a thin circle.
63 calories per cup, 2 carbs per cup

Low Carb Big Mac Meal

I have made this a few times and YES it tastes JUST like a Big Mac 😀 I doubled this recipe for my fam. Below is the thousand island recipe I made as well, it’s really good too. Make sure to share this one its a Keeper 😀

Low Carb Big Mac Meal

 

Ingredients:
1 1⁄2 Pound Ground beef
1 Tablespoon Bouillon   (Use chicken)
2 Tablespoon, dried Onion flakes
1 Tablespoon, dried Parsley
1 Teaspoon Garlic powder
8 Ounce Cheddar cheese

Low Carb Thousand Island Dressing 

1 cup Mayonnaise (16 tbs)
1/3 cup Ketchup (5.5 tbs)
2 Tbs sweet pickle relish
1/2 tsp, Onion Powder
dash of salt
dash of garlic powder

Directions:

1. Preheat oven to 375 degrees F.
2. In a large skillet, brown ground beef. Season with chicken bouillon, dried onion flakes, parsley, onion powder, and garlic powder.
3. In a large bowl, place seasoned ground beef. Add cheddar cheese, thousand island dressing, eggs, sour cream, and dill pickles. Mix together thoroughly.
4. Add ground beef mixture to an 8×11-inch baking dish and spread to corners. Bake for 30 minutes. ENJOY

Thousand Island Recipe:
1 cup Mayonnaise (16 tbs)
1/3 cup Ketchup (5.5 tbs)
2 Tbs sweet pickle relish
1/2 tsp, Onion Powder
dash of salt
dash of garlic powder

Put all ingredients in a jar, screw on lid and shake well

I’d like to wear that down the aisle next year for my 20th anniversary when my husband and I renew our wedding vows on November 7th in 2018! won’t that be a hoot and a half! Who knows? At this rate, I just might make it!

Buttery Garlic Spinach With Bacon

Ingredients
5 tablespoons butter
5 cloves garlic minced
1 bag baby spinach
5 strips bacon cooked and crumbled
1 tsp salt

Instructions
Heat up a skillet and add the butter. Add garlic and saute until aromatic.
Add the spinach into the skillet, follow by cooked, crumbled bacon, stir to combine. Add salt if desired.
As soon as the spinach leaves start to wilt, turn off the heat and transfer to a serving platter.
Serve immediately.

Why add cranberries? by adding Cranberries to a smoothie drink for fat loss. Cranberries are rich in essential vitamins and minerals that are needed in the body for normal operations, including liver function. Cranberry juice helps flush toxic fluids from the body, reducing water weight and waste products that are trapped in your tissues. Increased digestive processes also speed up the metabolism, which increases calories burned and fat-burning potential. And Bananas are rich in potassium, which provides energy to the body and a natural source of sugar to sweeten the smoothie. Chocolate Cranberry Smoothie

1 cup Milk (I used 2 % but you could also use almond milk too if you wish)

1 banana

1/2 cup frozen cranberries

1/2 cup frozen raspberries

1 scoop of your favourite Chocolate protein  powder

DIRECTIONS:
In a Blender add milk, banana, mixed berries, and cranberries in a blender until smooth.
