You do not have to ruin your low carb plan this holiday season!! 🎅🎄

Low Carb Almond Sugar Cookies

1-1/4 cup almond flour
1 cup Stevia
1/4 cup butter, at room temperature
1 large egg
1 teaspoon vanilla
additional stevia, for decorating
Pre-heat oven to 350 F. Line baking sheets with parchment paper or a non-stick baking mat. Stir together flour and stevia. Blend in butter, egg and vanilla until well mixed. Form into 1-inch balls on a cookie sheet and flatten each with a fork. Sprinkle with additional stevia. Bake for 8 minutes or until set but not brown. Allow to cool for 2 minutes on baking sheet then remove to wire racks to cool.

Low Carb Brownies

Makes about 48
1 cup ground almonds, well sifted
1/2 teaspoon baking powder
1/2 teaspoon salt
1-3/4 cups Stevia
1 cup unsalted butter
4 ounces unsweetened baking chocolate, chopped (or 3/4 cup cocoa and 1/4 cup butter)
2 teaspoons vanilla
4 extra large eggs, beaten
1 cup chopped pecans
Preheat oven to 350 F. Butter a 9″ x 13″ cake pan. Stir together almonds, baking powder, salt and stevia; set aside. In a microwave bowl, on high, melt the butter and the chocolate, stirring frequently. Beat eggs and vanilla together. Stir in the dry mixture, mix well. Add chocolate and mix again then stir in the pecans. Pour into the prepared pan, spread evenly. Bake for about 20 minutes or until a toothpick inserted in the center comes out clean. Check at 15 minutes. Do not overbake. Cool on wire rack, cut into 48 squares.
Note: 1.8 net carbs per square

Low Carb Chocolate Chip Cookies

1 cup butter, softened
1-1/2 cups Stevia
1-1/2 teaspoons dark molasses
2 large eggs
1 cup almond flour
1 cup vanilla whey protein powder
1/4 cup oat bran
1 teaspoon baking soda
1 teaspoon salt
12 ounces sugar free chocolate bar, chopped into small pieces
1 cup chopped walnuts or pecans
Preheat oven to 375°F. Line baking sheets with parchment paper or a non-stick baking mat. Beat together butter, Stvia, and molasses until light and fluffy. Add eggs, one at a time, and beat well after each addition. In a separate bowl, stir together ground almonds, vanilla whey protein powder, oat bran, baking soda and salt. Stir almond flour mixture into butter mixture until blended. Stir in nuts and chopped chocolate bars. Drop by rounded tablespoons onto preparted baking sheets. Flatten with palm of hand. Bake for 10 minutes, or until golden. Allow to cool for 2 minutes on baking sheet then remove to wire racks to cool.

Low Carb Peanut Butter Cookies

1.3 grams of carbs per cookie
Makes about 40
1/2 cup sugar-free chunky peanut butter
3/4 cup heavy cream
1/2 cup chopped pecans
2 teaspoons vanilla extract
4 packets of sugar substitute
2 tablespoons soy flour
1 teaspoon baking powder
Pre-heat oven to 375 F. Line a baking sheet with parchment paper or a non-stick baking mat, or spray it with non-stick cooking spray. In a large mixing bowl blend together all ingredients. Drop by teaspoons on prepared baking sheet. You should have 40 cookies. If you have more, the carb count per cookie will be less, and if you have less than 40 cookies the carb count will be more. Bake about 10 minutes or until set. Cool for 1 minute on baking sheet then remove to wire racks to cool completely.

Low-Carb Snickerdoodles

Ground almonds create an “almond flour” which is a wonderful substitute for wheat flour for many baking recipes.
Makes about 26
1/2 cup butter, softened
1-1/2 cups ground almonds
1 cup granulated Stevia
1 large egg
1/2 teaspoon vanilla extract
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar
2 tablespoons granulated Stevia
1 teaspoon cinnamon
In a medium bowl, beat butter until creamy. Add half the ground almonds, 1 cup Stevia, egg, vanilla, baking soda and cream of tartar. Beat until well combined. Beat in remaining ground almonds. Cover and chill in bowl for 1 hour. Pre-heat oven to 350 F. In a small bowl, combine the 2 tablespoons Stevia and the cinnamon; mix well. Roll chilled dough into 1-inch balls. Gently roll each ball in the cinnamon-Stevia mixture to coat and place 2 inches apart on an ungreased baking sheet. Bake 10-12 minutes until lightly browned at the edges. Carefully remove from pan to cooling rack to cool completely.
Note: 1.5 net carbs per cookie

Pecan Pound Cake

I LOVE Pound cake and this one is soo good. This is VERY easy to make one of our family Fav’s 

Pecan Pound Cake

1 cup Butter (or marg.) Softened
2 cups Sugar
6 eggs separated
3 cups of flour
1/4 teaspoon Baking Soda
1 cup yogurt, plain or sour cream
2 cups Pecans chopped to 4 cups

1. Cream butter and sugar until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Set aside about 1/4 cup flour. Combine remaining flour and soda; add to creamed mixture alternately with yogurt, beat well after each addition. Fold in stiffly beaten egg whites.
Dredge pecans in reserved flour, and fold into batter.

2. Spoon batter into a greased and floured 10-inch tube pan or Bundt pan. Bake at 300 for 1-1/2 hours. Cool 15 minutes before removing from pan.

Tender Fall off the Bones Ribs

You will need:
Ribs – beef or Pork (I used Pork)
Spices of your choice
Low Carb BBQ sauce or any store brand (Your Choice)
First I made a spice rub mixture. You can use what you like but I used:
Garlic Powder
Himalayan Salt
Black Pepper
Smoked Paprika
Celery Salt
Worcestershire Sauce
Squeeze of Lime Juice
Next, rub the spice mixture into the ribs and refrigerate – the longer it sits the more flavor you will have but if you choose you can cook right away
Wrap the ribs tightly in aluminum foil before refrigerating/cooking
I baked mine at 300 degrees for 3 hours

I added my Low Carb BBQ sauce (recipe to follow) and turned on the broiler for 3 minutes
Delicious!!!

Low Carb BBQ Sauce

(this has a kick to it, so go easy on the hot stuff if you don’t like it hot)
3/8 cup vinegar
1 1/2 cup tomato sauce
3 tablespoons Worcestershire sauce
1 1/2 tablespoon yellow mustard
3/4 tablespoon Franks Hot Sauce
3/4 tablespoon salt
1 dash cayenne pepper. Go easy if you don’t like spicey!!!!
3 teaspoons lemon juice
1 1/2 teaspoon liquid smoke flavoring
6 teaspoons Stevia or 18 drops of Liquid Stevia
Add vinegar and all other ingredients except mustard to a saucepan and slowly heat. Put mustard in a cup and slowly stir in a couple tablespoons of sauce until well blended. Then add mustard mixture back to sauce in the pan.
Bring to a boil, and lower heat. Simmer for a few minutes. Let cool, then refrigerate.
Note: this sauce will taste a bit peculiar if you taste it when it is still hot. Don’t worry! Something magical happens when it sits in the fridge.
Carbohydrates per Serving (1 tablespoon): Less than 1 gram. Half an ounce is 1 gm carbs, 6 calories.

Double Chocolate Zucchini Bread

The kids say this tastes like a brownie it’s sooo yummy 🙂

Double Chocolate Zucchini Bread

What you Need

  • 2 stick unsalted butter melted 
  • 2 cup brown sugar, packed
  • 4 large eggs
  • 2 teaspoon vanilla extract
  • 2-1/2 cups all-purpose flour,
  • 1 cup  cocoa powder 
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 cups shredded zucchini 
  • 2 cup  chocolate chips

Instructions

  1. Preheat the oven to 350 F degrees and grease 2 loaf pan with nonstick cooking spray.
  2. Mix together melted butter and brown sugar until completely smooth. (I used my KitchenAid mixer) Add the eggs and vanilla and mix well.
  3. Whisk together the flour, cocoa powder, salt, baking powder, baking soda in a medium bowl. Add to the butter mixture and mix until well combined.
  4. Stir in the shredded zucchini and chocolate chips.
  5. Spoon the batter into the 2 prepared loaf pans and spread evenly. Bake for 60-65 minutes, or until a toothpick or cake tester inserted into the center comes out clean. Let the loaf cool on a rack for about 10 minutes before turning out onto a rack to cool completely.

Zucchini Garlic Cheesy Bread

I made this last night to go with our spaghetti it was very yummy, this would be nice to have as a snack with some marinara sauce mmmmm. Great for people who are following a keto diet  My hubby and kids loved it  

Zucchini Garlic Cheesy Bread

What you need
5 cups grated zucchini
3 eggs
4 cloves of garlic minced
1 tsp oregano
3 cups shredded mozzarella
1 cup grated parmesan cheese
1/4 cup cornstarch
salt & pepper to taste
2 tsp parsley

Preheat oven to 425, line a baking sheet with parchment paper. make sure all moisture is out of your grated zucchini by patting it dry with a paper towel.
In a large bowl mix zucchini, eggs, garlic, oregano, 1 cup mozzarella, parmesan cheese, parsley, salt and pepper, and cornstarch. Stir until well mixed together.
Pour mixture on the prepared baking sheet and pat into a crust. Bake until golden brown and dried out about 30 mins.
Sprinkle remaining mozzarella cheese and sprinkle some more parsley on top and bake for 10 minutes more or until the cheese is melted
Slice and serve and Enjoy 

Rhubarb Pecan Apple Cake

💕 Rhubarb Pecan Apple Cake 💕

I made this last night and OH my is it ever good and moist, this one is definitely a keeper

What you need is
1 cup vegetable oil
2 cups Sugar
3 eggs
3 cups flour
1 teaspoon baking Soda
2 teaspoons Vanilla extract
1 cup Chopped Pecans
2 cups peeled and chopped apples
1 cup Rhubarb

Preheat oven to 350. grease a 9×13 pan. In a mixing bowl mix all above except for pecans, apples and rhubarb. The batter will be stiff, mix well then add pecans, apples, and rhubarb and mix well. Spread into your pan. Bake for 45 min. The apples and rhubarb will moisten this cake while cooking, its delicious.

Lisa’s Tuna Melts

These are sooo easy to make and very yummy. Now keep in mind I am feeding 4 men so you can scale this down to size LOL. This is how I make them.

Lisa’s Tuna Melts

What you need
6 Ciabatta buns cut in half
4 cans of flaked white tuna drained
1 package of cream cheese
1/2 cup mayo
1 tablespoon lemon
1 tsp granulated garlic
salt and pepper to taste
2 tomatoes sliced
green onions chopped
cheese to top

I used my kitchen aid mixer and mixed together the tuna, cream cheese, and mayo, mixed it well, then added the lemon, garlic and salt and pepper, give it a taste and if needed add more lemon and salt and pepper 

Line a cookie sheet with tin foil, place your buns on it, and evenly spoon the mixture between the buns. top with chopped onions, tomatoes and then cheese, as much or as little as you like.

I bake mine in the oven at 375 for about 10 to 15 minutes or so. I like it all heated through evenly

Mozzarella Stuffed Meatballs

Mozzarella Stuffed Meatballs

1 lb. ground beef…
1 lb. ground pork
1 cup breadcrumbs
1 TBSP Italian seasoning
3 eggs
3 garlic cloves, minced
1 tsp. salt
1/2 tsp. pepper
1/2 lb. mozzarella, cut into cubes
Olive Oil
Marinara (jar or homemade)


In a large bowl mix beef through pepper. Form into 2″ balls. Press a cheese cube in the middle and seal the meat around it.
Heat 1/2″ olive oil in a large skillet. Brown meatballs and then set aside on a plate.
Pour marinara sauce into pan; bring to a simmer. Add meatballs and simmer until cooked through about 30 minutes.
Serve over spaghetti or on top of a Hoagie Bun.

 

Lisa’s Rhubarb Pie

 
This is my Rhubarb pie recipe, its sweet and tart and OH so yummy 😀
 
Lisa’s Rhubarb Pie
 
What you need
1 uncooked pie crust
3 cups rhubarb cut up
1 1/2 cups Brown Sugar
2 eggs
3 tablespoons Milk
3 tablespoons flour
 
Pre- heat oven to 350. Add cut up rhubarb into a pie crust. In a bowl mix together the rest of the ingredients, make sure you mix them together well. Pour over rhubarb and bake in the over for about 50 min or till center is set.
