Low Carb Big Mac Meal

I have made this a few times and YES it tastes JUST like a Big Mac 😀 I doubled this recipe for my fam. Below is the thousand island recipe I made as well, it’s really good too. Make sure to share this one its a Keeper 😀

Low Carb Big Mac Meal

 

Ingredients:
1 1⁄2 Pound Ground beef
1 Tablespoon Bouillon   (Use chicken)
2 Tablespoon, dried Onion flakes
1 Tablespoon, dried Parsley
1 Teaspoon Garlic powder
8 Ounce Cheddar cheese

Low Carb Thousand Island Dressing 

1 cup Mayonnaise (16 tbs)
1/3 cup Ketchup (5.5 tbs)
2 Tbs sweet pickle relish
1/2 tsp, Onion Powder
dash of salt
dash of garlic powder

Directions:

1. Preheat oven to 375 degrees F.
2. In a large skillet, brown ground beef. Season with chicken bouillon, dried onion flakes, parsley, onion powder, and garlic powder.
3. In a large bowl, place seasoned ground beef. Add cheddar cheese, thousand island dressing, eggs, sour cream, and dill pickles. Mix together thoroughly.
4. Add ground beef mixture to an 8×11-inch baking dish and spread to corners. Bake for 30 minutes. ENJOY

Thousand Island Recipe:
1 cup Mayonnaise (16 tbs)
1/3 cup Ketchup (5.5 tbs)
2 Tbs sweet pickle relish
1/2 tsp, Onion Powder
dash of salt
dash of garlic powder

Put all ingredients in a jar, screw on lid and shake well

Maple Brown Sugar Quinoa

Quinoa for breakfast?? ABSOLUTELY with this delicious Maple Brown Sugar Quinoa!!

Serves 4

A quinoa breakfast that is satisfying, sweet and surprisingly delicious.

Prep Time – 10 min

Cook Time – 30 min

Total Time – 45 min

Ingredients
1 cup whole grain organic quinoa
2 cups fat free milk
3 tbsp brown sugar
1 tbsp maple syrup

Instructions
1.Rinse quinoa in a fine mesh strainer by running cold water over the quinoa for several minutes and then set aside
2.In a medium saucepan bring milk to a boil
3.Add in rinsed quinoa, cover and reduce heat to low and simmer for about 15 minutes or until about 2/3 of the milk has ben absorbed
4.Stir in brown sugar and maple syrup and continue cooking UNCOVERED for an additional 8-10 minutes or until the milk is absorbed
5.To serve add in additional milk, brown sugar,maple syrup or fruit if desired

I always think back to “The Help” those famous words “You is Kind, You is smart , You is important” . AND YES YOU ARE, So today start by telling your self these things. Common Body Measurements

It’s easy to get discouraged when you work so hard to lose weight and your efforts don’t pay off on the scale. Seeing the same number week after week can make you want to drown your sorrows in a pint of Haagen-Daz. But wait! Before you pick up that spoon, take your measurements.

Body measurements can be a useful way to track your progress. Many times you’ll see a loss of inches even if the scale isn’t moving. To ensure accuracy, measure in exactly the same place and under the same conditions each time. Here are some instructions and tips to help you.

Common Body Measurements

Bust: Place the measuring tape across your nipples and measure around the largest part of your chest. Be sure to keep the tape parallel to the floor.

Chest: Place the measuring tape just under your breasts/pecs and measure around the torso while keeping the tape parallel to the floor.

Waist: Place the measuring tape about a 1/2 inch above your bellybutton (at the narrowest part of your waist) to measure around your torso. When measuring your waist, exhale and measure before inhaling again.

Hips: Place the measuring tape across the widest part of your hips/buttocks and measure all the way around while keeping the tape parallel to the floor.

Thigh: Measure around the largest part of each thigh.

Calves: Measure around the largest part of each calf.

Upper arm: Measure around the largest part of each arm (above the elbow).

Forearm: Measure around the largest part of each arm (below the elbow).

Neck: Measure around the largest part of the neck.

Tips for Measuring

When taking measurements, stand tall with your muscles relaxed and your feet together.

When measuring, apply constant pressure to the tape (so it doesn’t sag) without pinching the skin.

Use a flexible measuring tape, such as plastic or cloth.

Measure under the same conditions each time, such as wearing the same clothes (or none at all).

Measure yourself in front of a mirror to make sure the tape is positioned correctly. If possible, have someone else do the measuring for you.

The place to take some of these measurements will vary slightly from person to person. To ensure accuracy, just remember to take them in the same place on your body each time.

So don’t let the scale get you down! Losing inches means you’ll be wearing a smaller size in no time! Everyone will be commenting on how great you look and the number on the scale will suddenly seem a lot less important.

Tuna Noodle Casserole

Tuna Noodle Casserole ~ this is SO good! ~

8 oz egg noodles, cooked
2 Tbsp olive oil
1/3 c onion, diced small
1/3 c carrot, cut into small pieces
2 Tbsp flour
3 cups skim milk
4 oz Neufchatel cream cheese, softened
2 Tbsp mustard (Dijon is best)
½ tsp onion powder
Salt and Pepper TT (to taste)
¾ c frozen green peas, thawed
½ c (2 oz) grated Parm cheese
2 (5 oz) cans Albacore Tuna; packed in water, drained

Preheat broiler in the oven. Spray your baking dish and set aside. Cook the noodles according to the package and drain. Over med heat in a large skillet, sauté the onion and the carrot in olive until the onion is translucent and the carrot is softened. Add the flour and cook for a minute or two. Add the milk and whisk until slightly thickened; approximately 5 minutes. Stir in the cream cheese, mustard, onion powder and S & P. Stir constantly and cook til incorporated well. Remove the pan from the heat and add the remaining ingredients along with the noodles. Spoon into the prepared dish and top with a little more Parm cheese, if desired. Cook under the broiler until the top is slightly browned and the dish is warmed through. Let stand a few minutes and enjoy! ~
Yield: 4-6 servings

Lisa’s Swiss Chard

I made this last night, first time I ever tried Swiss Chard and I LOVED it

Lisa’s Swiss Chard 

1 bunch of swiss chard
1 package of mushrooms, (i used mini bella) 
green onions
1 clove garlic (or more depends on your taste, I have a jar of already minced garlic I used 2 tsp) 
salt and pepper
Olive oil (or prefered oil)

Wash swiss chard and pat dry, cut the leaves away from the stem in a V shape along the stem up the leaf. Chop leaves and then chop stems

In a frying pan heat up some olive oil, add the stems first as they take longer to cook. Sautee for about 3-5 min add garlic and mushrooms, when they are about cooked add in the leaves, salt and pepper to taste, once the leaves are wilted its cooked.

This one really hit home for me today. I was told this week that my Dad has throat Cancer, we are still waiting for his appointment for the Cancer clinic so we don’t know much about how bad or treatment wise. I was so taken back when he told me (I kind of was not surprised as he has been sick for awhile now) BUT what happened was everything flooded back with what I went threw with my Mom. I was so upset, I needed my Hubby and he was at work, I was going to go find him but I was such a mess I could not drive, I seen the garbage truck and prayed that he was on garbage run that day, as I put on my coat and boots I went out and here he came down the road in the loader. I was so relived to see him, he came in the house for a min and we talked, its funny how God works as I had prayed I needed Barry and there he was <3 I sat by myself that day, in the quiet and thought ok, I cant get worked up, I cant change what is, all I can do is PRAY and HAVE FAITH and put this in God’s hands. Yes my Faith was tested that day, I could have sat and got myself so worked up that I would put myself into a downwards spiral, OR I could Trust in God and put it in His hands as I cant change what is. I wont be bitter, I wont be depressed, I will put it in God’s hands and have FAITH in Him <3 <3 No matter WHAT you are going threw put it in HIm hands and have FAITH <3
