Lisa’s Twice-Baked Potatoes

what you need
5 large baking potatoes
1 tablespoon oil
1 1/2 tablespoons milk
1 1/2 tablespoons butter
1 cup sour cream
1 1/2 cups cheddar cheese, grated
1/2 tablespoon garlic salt
Salt and pepper
3 slices bacon, cooked and crumbled
parsley or green onions

Directions

Preheat the oven to 375 degrees F.

Wash the potatoes and pierce them with a fork. Rub the potatoes with the oil and place them on a large cookie sheet lined with tinfoil. Bake the potatoes for 45 minutes to an hour, or until done. Remove the potatoes from the oven and cut them in half lengthwise. Reduce the temperature of the oven to 350 degrees

When the potatoes are cool enough to handle, scoop out the potato flesh into a large mixing bowl, I used my kitchen aid mixer for this. Add the milk, butter, sour cream, cheese, garlic salt, and salt and pepper to taste. Mix until creamy. Divide the mixture evenly between potato shells . Garnish with bacon and parsley or onions, return the potatoes to the oven for 15 minutes.

Lisa’s Hash Brown Casserole

Do you get sick of the same old potatoes? I know we do, this is a hit in our house, so easy to make and tastes soooo good.

Lisa’s Hash Brown Casserole

what you need 
1 1/2 bags of frozen hash browns
1 large tub sour cream (500 ml)
1/2 cup melted butter
1 cup Hellman’s Mayo
2 cans mushroom soup
2 1/2 cups grated cheddar cheese
parmesan cheese for the top

Slightly thaw hash browns for easier mixing. Spray a 9×13 baking dish with cooking spray and set aside. Pre heat oven to 350.
In a large bowl mix everything together well except for the parmesan cheese. Once mixed together well pour into your prepared 9×13 and sprinkle Parmesan cheese on top. Place in oven and bake for 1 to 1 1/2 hours. This recipe also freezes well unbaked. Perfect if you want to make it ahead of time and freeze it for another night  Then you can just pop it in the oven
