2 Minute Microwave Coffee Cake

2 tablespoons almond flour
1 tablespoon coconut flour
3-3 1/2 tablespoons sweetener – like truvia
1/2 teaspoon vanilla
1/4 teaspoon baking powder
1/8 teaspoon salt
1 large egg
1 tablespoon coconut oil (or butter) melted
2 tablespoons buttermilk (or reg milk or water)

1 1/2 tablespoons almond flour
1 1/2 teaspoon sweetener
1/2 teaspoon cinnamon
1 tablespoon butter (cold)

In a microwaveable bowl whisk together almond flour, coconut flour, sweetener, vanilla, baking powder & salt. Make a well in the center and add egg, melted coconut oil (or butter), buttermilk (or other liquid). Whisk together briskly until smooth. It might be stiff .. blend in enough liquid to make a cake batter consistency.

Topping: Blend almond flour, sweetener and cinnamon together in another small bowl. Cut in the butter with a fork or pasty blender until it is crumbly. Spread on top of batter.

Microwave on high for approximately 2 minutes. Test for doneness. Cool a minute or two before serving.

Homemade Chips

These are so easy to make and tastes sooo good and much healthier than the ones you buy in the store 

What you need

Potatoes, any kind works and as many as you need
salt and pepper or your choice of spices ( granulated garlic powder, seasoning salt, cayenne pepper, dried dill weed, granulated garlic powder etc )
cooking spray
Parchment paper
Peel and slice potatoes very thin, you can use a Mandolin Slicer or knife, they must be sliced thin, less than 1/16″ in thickness (paper thin)

Spray parchment paper with cooking spray, place the sliced potatoes flat on the paper in a single layer. Microwave on HIGH (full power) for 5 to 5 1/2 minutes or until they curl slightly and are a very light brown in color. The thinner the slices, the quicker they cook and the tastier they are.
Remove from microwave, let cool and repeat till taters are all used up.
