Bacon Cheeseburger Mushroom Pie

What you need is :
1 can (12 oz) Pillsbury Homestyle Buttermilk Biscuits
1 lb lean (at least 80%) ground beef
6 strips of Bacon
1/4 cup chopped onion (1/2 medium)
1/3 cup ketchup
3 tablespoons yellow mustard
2 tablespoons sweet relish
1 can mushrooms
1 teaspoon of garlic granules or powder
1/4 teaspoon salt
1/4 teaspoon pepper
shredded cheese, I use about 1/2 package of a 3 cheese blend for 2

Heat oven to 400°F. Grease 9-inch pie pan with shortening. Separate dough into 10 biscuits. Press 6 biscuits in the bottom and up the side of the pie pan to form a crust. Cut remaining 4 biscuits into quarters; set aside.

In a skillet, cook ground beef, bacon, and onion over medium heat, stirring frequently, add mushrooms and cook till until beef is thoroughly cooked; drain. Stir in ketchup, relish, mustard, salt, and pepper. Cook uncovered until bubbly. Spoon into biscuit-lined pan, Place biscuit quarters, point side down, around the edge of hot beef mixture top with shredded cheese

Bake 15 to 17 minutes or until biscuits are golden brown.

Instant Pot Cowboy Casserole

Ingredients

  • 2 lbs ground beef browned
  • 2 to 3 pounds red potatoes scrubbed and quartered
  • 1 onion chopped
  • 1 can 10 ounces tomatoes 
  • 1 can 15.5 ounces kidney beans, drained and rinsed
  • 1 teaspoon chili powder
  • 2 teaspoons cumin
  • 1/4 cup water plus minimum required by your pressure cooker manufacturer
  • Salt and pepper to taste
  • 1 cup shredded sharp cheddar

Instructions

  1. This recipe requires the pot in pot method. If you do not have a pot to place inside the pressure cooker pot, create a sling/pot using aluminum foil.
  2. Add one cup of water and a trivet in your pot, Place your pan on the trivet using a foil sling. 
  3. To the sling/pot, place potatoes using salt and pepper to season well. Top with onion, cooked ground beef, beans, tomatoes, and seasonings. Add 1/4 cup water over the top of the casserole.
  4. Cover the instant pot and set the valve to sealing. Cook on manual or pressure cook setting for 30 minutes. Carefully use the quick release to depressurize the cooker. Stir the casserole.
  5. Cover with cheese and replace the lid until melted. Serve.
Instant Pot Cowboy Casserole 

Lisa’s Tuna Melts

These are sooo easy to make and very yummy. Now keep in mind I am feeding 4 men so you can scale this down to size LOL. This is how I make them.

Lisa’s Tuna Melts

What you need
6 Ciabatta buns cut in half
4 cans of flaked white tuna drained
1 package of cream cheese
1/2 cup mayo
1 tablespoon lemon
1 tsp granulated garlic
salt and pepper to taste
2 tomatoes sliced
green onions chopped
cheese to top

I used my kitchen aid mixer and mixed together the tuna, cream cheese, and mayo, mixed it well, then added the lemon, garlic and salt and pepper, give it a taste and if needed add more lemon and salt and pepper 

Line a cookie sheet with tin foil, place your buns on it, and evenly spoon the mixture between the buns. top with chopped onions, tomatoes and then cheese, as much or as little as you like.

I bake mine in the oven at 375 for about 10 to 15 minutes or so. I like it all heated through evenly

Lisa’s Pumpkin Spicy Chili

Here is another Chili recipe I came up with, its sooo yummy and soo good. Perfect for this time of year. Warms you right up 🙂 Not to hot either its just right 😀

Lisa’s Pumpkin Spicy Chili

Ingredients
2 pound ground beef
1 teaspoon red chili flakes
1 garlic clove crushed
1 small onion diced
1 can kidney beans,
1 can black beans
1 can lentils
2 cans pork & beans
1 can crushed tomatoes
1 can whole tomatoes
2 cups pumpkin puree
2 teaspoons pumpkin pie spice
2 teaspoons chili powder
2 teaspoon ground cumin
salt & pepper to taste
shredded cheese for topping (optional)

Heat a large skillet over medium-high heat with a little oil and add onions, saute for about 2 min or till they are soft and translucent. Add beef and cook till crumbly and no longer pink, Stir in the red pepper flakes, garlic, and continue cooking until the beef has browned .

Add the rest of your ingredients except the cheese, and mix together well. Turn down and let simmer on low for about 2 hours. When ready to serve ladle in bowls and top with a good hand full of shredded cheese. I serve cornbread with my chili perfect dinner for a cold winter day

NOTE: you could also do this in your crock pot as well. Cook your beef as directed above and then add everything in the crock pot and cook on low for about 8 hrs.
