Double Chocolate Zucchini Bread

The kids say this tastes like a brownie it’s sooo yummy 🙂

Double Chocolate Zucchini Bread

What you Need

  • 2 stick unsalted butter melted 
  • 2 cup brown sugar, packed
  • 4 large eggs
  • 2 teaspoon vanilla extract
  • 2-1/2 cups all-purpose flour,
  • 1 cup  cocoa powder 
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 cups shredded zucchini 
  • 2 cup  chocolate chips

Instructions

  1. Preheat the oven to 350 F degrees and grease 2 loaf pan with nonstick cooking spray.
  2. Mix together melted butter and brown sugar until completely smooth. (I used my KitchenAid mixer) Add the eggs and vanilla and mix well.
  3. Whisk together the flour, cocoa powder, salt, baking powder, baking soda in a medium bowl. Add to the butter mixture and mix until well combined.
  4. Stir in the shredded zucchini and chocolate chips.
  5. Spoon the batter into the 2 prepared loaf pans and spread evenly. Bake for 60-65 minutes, or until a toothpick or cake tester inserted into the center comes out clean. Let the loaf cool on a rack for about 10 minutes before turning out onto a rack to cool completely.

With Chocolate Cream Cheese Icing

INGREDIENTS
2 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1 1/4 tsp. baking soda
1/4 tsp. baking powder
3 eggs
1 2/3 cups sugar
1 tsp. vanilla extract
1 cup Hellmann’s Mayonnaise
1 1/3 cups water

DIRECTIONS
Preheat oven to 350°F Grease a 13×9 pan.
Combine flour, cocoa, baking soda and baking powder in medium bowl; set aside.
Beat eggs, sugar and vanilla in large bowl with electric mixer at high speed until light and fluffy, about 3 minutes. Beat in Mayonnaise at low speed until blended. Alternately beat in flour mixture with water, beginning and ending with flour mixture. Pour into prepared pn
Bake 30 minutes or until toothpick inserted in centres comes out clean. Cool 10 minutes on wire rack remove from pan and cool completely.

For the icing

What You Need
1 pkg. (8 oz.) Cream Cheese, softened
1/4 cup butter softened
1/2 cup chocolate chips
1 tsp. vanilla
1 1/2 cups powdered sugar

Melt Chocolate chips in the microwave. Set aside to cool.
Beat cream cheese and butter in large bowl with electric mixer on medium speed until well blended. Add melted chocolate and vanilla; mix well. Add sugar gradually, beating until light and fluffy. Use to frost cake
