Forget About It Chicken

A slow cooker chicken that you can put in the slow cooker in the morning and let it go all day!

Ingredients
1 whole chicken (4-5 lbs)
4-6 whole garlic cloves
3-4 garlic cloves minced
3 Tbsp chili powder
3 tsp salt
3 tsp pepper

Instructions
Chicken
Prepare slow cooker with a plastic disposable liner, if you prefer, or with a little non-stick spray
Rinse chicken and pat dry
Place whole garlic cloves in the cavity of the chicken
In a small bowl mix together minced garlic, chili powder, salt & pepper
With your fingers gently loosen the skin of the chicken
Spread spice mixture on the inside, outside and under the skin of the chicken
Place in the slow cooker
Cook on low for 6-8 hours or until chicken in done
Stock
Remove chicken from slow cooker
Pour liquid into a medium saucepan
Bring to a boil and let reduce for 5 minutes
Reduce heat to medium and continue to cook until stock is reduced by ⅓-1/2
Check for seasoning and add as necessary
Let cool completely
Store stock in an airtight container or freeze

Notes
1/10th of the chicken is 6 WW+ points. It is best to remove the skin from the chicken before consuming.

This recipe is awesome!!! The chicken will literally fall apart!

CROCKPOT CHICKEN

You’ll need:…
1 chicken
2 Tbs Olive oil
1/2 cup dark brown sugar
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp cayenne
1/2 tsp Chili powder
1/2 tsp ground cumin
1/2 cup water

Directions:
Rinse chicken, rub with olive oil and set aside.
Mix all the seasonings with the sugar. Rub the entire chicken, inside and out with the seasonings and place in crockpot. Add the water… Do not pour over chicken… You do not want to wash off the rub. Set on high and cook for 4 hours. The chicken will literally fall apart… Enjoy!!!
