Hi everyone just let me give a bit of my story with chronic illness.. Poached Salmon with Dill Sauce

I am always looking for new ways to make salmon, salmon is very good for you and I try to make it at least once a week, this is so yummy, dill is always an awesome combination with salmon and this dill sauce just added the right flavor.  This recipe is for 2 portions just double for more 🙂 Enjoy

Ingredients:
3/4 c fat-free sodium free chicken broth
3/4 c white wine 
1 1/2 Tbsp lemon juice
2 – 6oz salmon fillets
1/4 c fat-free Greek yogurt (plain)
2 tsp dried dill weed
seasoned salt to taste
1/4 tsp dijon mustard

In a skillet, combine the broth, wine, and lemon. Bring to a boil. Add the salmon; make sure the fish is covered by the liquid. (If not, add additional equal parts of broth and wine). Lower the heat and let fish simmer for approximately 10 minutes or until fish just flakes with a fork.
In a small bowl, mix together the yogurt, dill, salt, and mustard. Set aside.
Using a slotted spoon transfer fish out of poaching liquid and place on plates. Spoon the dill sauce over each fillet.

Ingredients:
* 1/2 cup pumpkin puree
* 1/2 ripe medium-sized banana…
* 3/4 cup fat-free vanilla yogurt
* 1 tbsp honey
* 1/2 tsp pumpkin pie spice
* 1/4 tsp vanilla extract
* 1 cup crushed ice
* Cool Whip (optional)
* Nutmeg (optional)

Directions:
Place all ingredients in a blender and puree until smooth, making sure the ice is completely crushed. This has 170 Calories and makes a great yummy snack!

Cherry Cordial Fat Bombs

Perfect for low carb diets like Atkins.

Ingredients:
4 oz Philadelphia Cream Cheese Regular (softened)
5 Tbsp butter (divided) (softened)
1/4 c + 1 Tbsp coconut oil
1 c frozen dark cherries
juice from 1/2 lemon
3 packets Stevia in the Raw
1 oz unsweetened baking chocolate squares

Directions:
Using a hand mixer, combine cream cheese, 4 Tbsp butter, 1/4 c coconut oil, lemon juice and 1 pk of Stevia, add more to taste if needed.
Line mini cupcake pan with cupcake holders. Add 1 Tbsp of the mixture to each cup. Place in freezer 3-4 hours until set.
Chocolate Topping:
Melt chocolate, 1 Tbsp coconut oil and 1 packet of Stevia or more if needed.
Put a drop of chocolate in each cup and spread it into a thin circle.
63 calories per cup, 2 carbs per cup

Lisa’s Swiss Chard

Lisa’s Swiss Chard 

1 bunch of swiss chard
1 package of mushrooms, (i used mini Bella)
green onions
1 clove garlic (or more depends on your taste, I have a jar of already minced garlic I used 2 tsp)
salt and pepper
Olive oil (or preferred oil)

Wash swiss chard and pat dry, cut the leaves away from the stem in a V shape along the stem up the leaf. Chop leaves and then chop stems

In a frying pan heat up some olive oil, add the stems first as they take longer to cook. Sautee for about 3-5 min add garlic and mushrooms when they are cooked add in the leaves, salt, and pepper to taste, once the leaves are wilted its cooked.

Bacon Wrapped Stuffed Chicken and Smothered Green Beans

for the chicken you will need
boneless skinless chicken breast
2 tablespoons cream cheese for each chicken breast
green onion, Chopped for each as much as you want
1 piece of bacon for each breast
fresh spinach

Directions:

Pound out the Chicken breast so it is about 1/4″ thick.
Mix together cream cheese and green onions and spread cheese mixture over 1 side of chicken breast, place spinach over cream cheese mixture
Roll Chicken breast up to conceal cream cheese.
Wrap bacon around chicken breast and secure with a toothpick. Sprinkle each with salt and pepper
Place on baking sheet and bake for about 40 minutes at 350.

for the green beans 
I package of green beans (I used the frozen extra fine kind)
1/2 lb bacon cut into small pieces
3-4 garlic cloves chopped
1 can mushrooms
1 medium onion diced
1/2 cup slivered almonds
1/2 cup pure maple syrup
1/2 tsp of the following basil, dill, parsley, fennel seeds
Salt and pepper to taste

Fry up bacon, remove and set aside. On medium heat cook onions in bacon grease until tender, add garlic, cook until fragrant. Add mushrooms and spices. Add maple syrup, bacon, and almonds. Sprinkle w salt and pepper to taste. Grease a baking dish, mix together your frozen green beans and your sauce, bake in oven with lid off at 350 for about 30 min

Oven Roasted Corn on the Cob

I came up with this tonight and OH my it was soo good, and you won’t even think about boiling fresh corn again! It’s AMAZING  You can add whatever spices or herbs you wish and adjust the recipe according to how many you make this is for a dozen cobs. I used fresh herbs but you can use dried too.

 Oven Roasted Corn on the Cob 

What you need
12 cobs of corn
1/2 cup butter softened
1 tsp chopped thyme
1 tsp chopped basil
1 tsp chopped parsley
1 tsp chopped oregano
1 tsp granulated garlic
salt and pepper to taste

DIRECTIONS
Preheat oven to 450 degrees.
Remove husks and silks from corn.
Mix all herbs and spices with the butter in a small bowl
Butter corn with your butter mixture and wrap corn in foil. I wrapped them individually.
Place wrapped up corn on a cookie sheet and bake for 20 to 25 minutes.
