Low Carb Big Mac Meal

I have made this a few times and YES it tastes JUST like a Big Mac 😀 I doubled this recipe for my fam. Below is the thousand island recipe I made as well, it’s really good too. Make sure to share this one its a Keeper 😀

Low Carb Big Mac Meal

 

Ingredients:
1 1⁄2 Pound Ground beef
1 Tablespoon Bouillon   (Use chicken)
2 Tablespoon, dried Onion flakes
1 Tablespoon, dried Parsley
1 Teaspoon Garlic powder
8 Ounce Cheddar cheese

Low Carb Thousand Island Dressing 

1 cup Mayonnaise (16 tbs)
1/3 cup Ketchup (5.5 tbs)
2 Tbs sweet pickle relish
1/2 tsp, Onion Powder
dash of salt
dash of garlic powder

Directions:

1. Preheat oven to 375 degrees F.
2. In a large skillet, brown ground beef. Season with chicken bouillon, dried onion flakes, parsley, onion powder, and garlic powder.
3. In a large bowl, place seasoned ground beef. Add cheddar cheese, thousand island dressing, eggs, sour cream, and dill pickles. Mix together thoroughly.
4. Add ground beef mixture to an 8×11-inch baking dish and spread to corners. Bake for 30 minutes. ENJOY

Thousand Island Recipe:
1 cup Mayonnaise (16 tbs)
1/3 cup Ketchup (5.5 tbs)
2 Tbs sweet pickle relish
1/2 tsp, Onion Powder
dash of salt
dash of garlic powder

Put all ingredients in a jar, screw on lid and shake well

Lisa’s Sweet and Sour Meatballs

Lisa’s Sweet and Sour Meatballs

36 frozen lean beef meatballs (i just did one whole bag 🙂 )
1 cup of pineapple chunks (i just used a whole can)
1/2 cup water
4 tbs ketchup
1 tbs of each, prepared mustard, maple syrup and brown sugar
1 tbs of vinegar
1 clove garlic, minced
1 tsp cornstarch

preheat oven to 350, place meatballs and pineapple  in a baking dish
Whisk the water, ketchup, mustard, maple syrup, brown sugar, vinegar,  garlic, and cornstarch together, pour over meatballs
Cook for about 30 min or till meatballs are cooked through and sauce is thickened (add a couple of spoonfuls of water if the sauce becomes too thick.

Serve over rice
ENJOY

8g total fat, 5g saturated fat, 0 g trans fat, 40 mg cholesterol, 20 g carbohydrates, 2 g fiber, 16 g protein 534 mg sodium, 522 mg potassium.

Mom’s AWESOME Carrot Cake

OK I know this is NOT the healthiest, LOL. I came across this recipe yesterday, I am telling you this is the BEST carrot cake EVER. My Mom use to make this one all the time, I had some really awesome memories <3 My Mom passed away 7 years ago, I found this yesterday and thought ok I HAVE to make it, it was like Mom was in the Kitchen with me <3

Mom’s AWESOME Carrot Cake

2 cups flour

1 tsp salt
1 1/2 tsp baking soda
1 1/2 cup oil
4 eggs (beaten)
1 c coconut
2 c sugar
1 tsp baking powder
3 tsp cinnamon
1/2 cup walnuts (i don’t put them in as no one likes them in my house)
2 cups grated carrots
1 can crushed pineapple, drained

Mix together sugar, oil and eggs. Add dry ingredients and mix well. Add carrots, pineapple, and coconut, and walnuts. Pour into lightly greased 9×13 or I use a flute pan. Bake at 350 for 40-45 min or till done

Once completely cooled ice with Icing:
Icing
1 pack of cream cheese (softened)
1/4 cups butter (soft)
2 cups icing sugar
1/2 tsp Vanilla
Mix together and beat with beaters until light and fluffy. Spread on well-cooled carrot cake

Don’t waste your life trying to impress people to be happy, you will never be free if you do, as the longer you try to impress others the more unhappy you will be. Think of Jesus, he never cared what other thought of him, He went about doing his work and not giving a care to what others thought, He knew what He was doing was RIGHT and that was preaching God’s word. Being a people pleaser will only hurt you, as the more you try to please and impress the more you get hurt, OH dont I know this one, I tried for YEARS to please certain ones in my life and I was always so stressed out, I was never happy, until I learned that I DON’T NEED to do this anymore. Not everyone will do what you want them too, not everyone will think the way you do, no one person is the same. Some people live lives full of bitterness and resentment, and you will NEVER be able to please these types of people. Remember that God did not make you to be a doormat, to be used and abused. Is life really worth walking around stressed out and bitter all the time?? YES you can forgive these people but that does not mean you have to have a relationship with them. I have forgiven many people in my lifetime for the pain they caused me, BUT I do not chose to have a relationship with them, because if I do I will be walking down that same path I did before and for me it is NOT WORTH living like that . Sometime you have to accept that people will not change and you can not change them, MOVE ON. I have STOPPED trying to impress people and please them, I know who I am, I know my heart and so does God and that’s what matters <3
Everyone’s attitude belongs to them and nobody can give you a bad or good attitude, that’s your RESPONSIBILITY and your CHOICE to control. If your going to live a life with a bad negative attitude, then your life is going to be filled with anger and bitterness, if you are going to live life with a happy, carefree, content life, then you are going to have a live FULL of Blessings, its your Choice NO ONE elses. What do you Chose??

Maple Brown Sugar Quinoa

Quinoa for breakfast?? ABSOLUTELY with this delicious Maple Brown Sugar Quinoa!!

Serves 4

A quinoa breakfast that is satisfying, sweet and surprisingly delicious.

Prep Time – 10 min

Cook Time – 30 min

Total Time – 45 min

Ingredients
1 cup whole grain organic quinoa
2 cups fat free milk
3 tbsp brown sugar
1 tbsp maple syrup

Instructions
1.Rinse quinoa in a fine mesh strainer by running cold water over the quinoa for several minutes and then set aside
2.In a medium saucepan bring milk to a boil
3.Add in rinsed quinoa, cover and reduce heat to low and simmer for about 15 minutes or until about 2/3 of the milk has ben absorbed
4.Stir in brown sugar and maple syrup and continue cooking UNCOVERED for an additional 8-10 minutes or until the milk is absorbed
5.To serve add in additional milk, brown sugar,maple syrup or fruit if desired

So you don’t have a lot of money, or a nice car, or a fancy house, you know what I dont either, BUT I know I am BLESSED in so many other ways its crazy, you need to stop and look at what you do have and STOP putting those negative thoughts in your head. I always think back to “The Help” those famous words “You is Kind, You is smart , You is important” . AND YES YOU ARE, So today start by telling your self these things. Get yourself out of the negative rut you have put yourself in and start by telling yourself these things EVERY DAY. DECLARE IT and see what happens <3

Common Body Measurements

It’s easy to get discouraged when you work so hard to lose weight and your efforts don’t pay off on the scale. Seeing the same number week after week can make you want to drown your sorrows in a pint of Haagen-Daz. But wait! Before you pick up that spoon, take your measurements.

Body measurements can be a useful way to track your progress. Many times you’ll see a loss of inches even if the scale isn’t moving. To ensure accuracy, measure in exactly the same place and under the same conditions each time. Here are some instructions and tips to help you.

Common Body Measurements

Bust: Place the measuring tape across your nipples and measure around the largest part of your chest. Be sure to keep the tape parallel to the floor.

Chest: Place the measuring tape just under your breasts/pecs and measure around the torso while keeping the tape parallel to the floor.

Waist: Place the measuring tape about a 1/2 inch above your bellybutton (at the narrowest part of your waist) to measure around your torso. When measuring your waist, exhale and measure before inhaling again.

Hips: Place the measuring tape across the widest part of your hips/buttocks and measure all the way around while keeping the tape parallel to the floor.

Thigh: Measure around the largest part of each thigh.

Calves: Measure around the largest part of each calf.

Upper arm: Measure around the largest part of each arm (above the elbow).

Forearm: Measure around the largest part of each arm (below the elbow).

Neck: Measure around the largest part of the neck.

Tips for Measuring

When taking measurements, stand tall with your muscles relaxed and your feet together.

When measuring, apply constant pressure to the tape (so it doesn’t sag) without pinching the skin.

Use a flexible measuring tape, such as plastic or cloth.

Measure under the same conditions each time, such as wearing the same clothes (or none at all).

Measure yourself in front of a mirror to make sure the tape is positioned correctly. If possible, have someone else do the measuring for you.

The place to take some of these measurements will vary slightly from person to person. To ensure accuracy, just remember to take them in the same place on your body each time.

So don’t let the scale get you down! Losing inches means you’ll be wearing a smaller size in no time! Everyone will be commenting on how great you look and the number on the scale will suddenly seem a lot less important.
