Lisa’s Soft Taco Casserole

What you need
2 lbs ground beef
1 soft taco kit (that contains the seasoning and 12 soft tacos)
3 cups Salsa (I used my homemade salsa)
2/3 cup water
1 bag frozen corn
1 bag nacho blend shredded cheese

Preheat oven to 350°F. In a large frying pan, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked. Stir in taco seasoning mix, water. Simmer 3 to 4 minutes, stirring frequently, until thickened. Stir in salsa and corn.

Spray 13×9-inch baking dish with cooking spray. Cut tortillas in half, place 1/2 of the tortilla halves in bottom of baking dish.

Top with half of beef mixture. Sprinkle with 1/2 the bag of the cheese and remaining tortilla halves. Top with remaining beef mixture and cheese.
Cover with foil and back in the oven for 35 to 40 minutes or until heated through and cheese is melted. Remove from oven Let sit for about 5 min, slice and serve and Enjoy!!
