I made this last night and BOY was it ever good no leftovers at all with this one. My guys loved it so much there was almost not enough LOL
Instant Pot Low Country Shrimp and Scallop Boil
What you need
2 cups Water
Old Bay Seasoning (I honestly didn’t measure this)
1 lb baby Potatoes (I used a bag of red and white one)
1 Onion, cut in thick slices
6 cloves Garlic, roughly chopped
2 Bay Leaves
1 Lemon, quartered
4 ears Corn on the Cob, cut in thirds
1 lb Smoked Sausage, (cooked) cut in 2″ pieces
2 lbs Frozen Shrimp and scallop mix ,partially frozen
Pour 2 cups water into your IP, Add some Old Bay seasoning
Add your potatoes onion, garlic, bay leaves, and lemon and sprinkle with Old Bay Seasoning.
Add corn and sprinkle some more Old Bay Seasoning
Add the sausage.
Add the shrimp and sprinkle with more Old Bay seasoning.
Close the lid and set the steam release knob to the Sealing position.
Press the Pressure Cook/Manual button for 4 minutes on high.
When the cook cycle is finished, do a Quick Release of the pressure. This will take a few minutes as the pot is full.
Open the lid once the pin has dropped down. Turn off the pot.
Use a large slotted spoon to scoop the boil contents to a large cookie sheet.
I sprinkled it with a little more Old Bay Seasoning.
