I’ve never made crockpot lasagna before and well let me tell you this was a hit last night 🙂 Loaded with cheese, no meat, bc well sometimes a meatless meal is ok 🙂
Crockpot Lasagna
What you need
2 cans of your fav sauce, (I used the Classico florentine spinach and cheese, it’s my FAV sauce)
1 box of oven-ready lasagna noodles
2 containers of cottage cheese (the 500ml ones)
1 container of ricotta cheese
1 package of shredded mozzarella cheese
2 eggs
Italian seasoning
pepper (i have pepper mill that I use)
Spray the crockpot good with cooking spray.
In a bowl, add the 2 containers of cottage cheese, 1 egg and 1 tsp of Italian seasoning and some pepper, mix well. set aside
In another bowl, mix the ricotta cheese, 1 egg and, 1 tsp of Italian seasoning and some pepper, mix well and set aside.
Spread a cup or so of sauce in the bottom of your crockpot, top with noodles broken into pieces to fit. Layer the remaining ingredients in the following order on top of the noodles in the bottom of your crockpot;
ricotta cheese mixture
mozzarella cheese
cottage cheese mixture
sauce
broken lasagna noodles
repeat – ensuring the last layer is the sauce.
Place lid on your crockpot and cook on high for 4 hours or till noodles are tender.
