Instant Pot Ham and Bean Soup

I used my leftover ham bone to make this comforting, hearty Ham and Bean soup. It’s pack full of flavor and so easy to do in your Instant Pot. If you don’t have a ham bone no worries just use leftover ham to make this 🙂 But the bone sure gave it some awesome flavor.

What you need

3 tbs olive oil
3 cloves garlic minced
1 onion chopped
1 tsp parsley
1/2 tsp thyme
1/4 tsp nutmeg
1/4 tsp basil
1 tsp salt
1 tsp pepper
2 bay leaves
1 cup frozen baby carrots
4 potatoes peeled and cut into small cubes
1 cup of frozen corn
1 can mixed beans drained
1 can lentils drained
1 can pork and beans in tomato sauce
1 can diced tomatoes
1 cup chopped ham
1 leftover cooked ham bone, I left bits of meat still on it.
4 cups chicken broth
2 cups of water

Set IP to saute and heat olive oil and add onions and garlic and saute until soft and fragrant then add 2 cups of water, then all your spices, salt & pepper.

Add ham bone to the pot, with the chopped ham, add everything else leaving the diced tomatoes and chicken broth for last, pour chicken broth overall place on the lid and using the soup button setting put it on for 10 minutes, it will take the pressure cooker about 28 minutes to come to full pressure.

When cooking is done let pressure release naturally for 5 minutes then do a quick release, using tongs take out the ham bone and remove remaining meat and return it to the pot, discard bone, stir well, remove the bay leaves and Enjoy!!
